Are you eating red meat regularly and still getting told your iron is low? Eating iron-rich food is only one part of the equation. Your body has to actually absorb that iron, hold onto it, and keep up with how much you’re losing. If there are any hiccups in this process, then the meat you’re consuming won’t be of much benefit.
Here’s what is preventing those iron-rich meals from raising your iron levels.
Absorption isn’t guaranteed
Not all the iron you eat gets absorbed and what you eat alongside your meat can matter almost as much as the meat itself.
- Coffee or tea with meals can significantly reduce iron absorption. Compounds in both bind to iron in your gut before your body can use it.
- Calcium from dairy or supplements taken at the same time, competes with iron for absorption.
- Phytates, found in whole grains and legumes, can also block absorption when eaten in the same meal.
- Vitamin C, on the other hand, helps you absorb more iron. Pairing meat with something like citrus or peppers can meaningfully improve uptake.
You might be losing iron faster than you’re replacing it
Eating enough iron isn’t beneficial when your outtake is greater than your intake.
- Heavy or prolonged periods are one of the most common causes of iron deficiency in women often more significant than diet.
- Frequent blood donation steadily depletes iron stores over time.
- Gastrointestinal issues including ulcers, hemorrhoids, or conditions that cause slow internal bleeding can cause iron loss that isn’t obvious day to day.

An underlying condition could be blocking absorption
Sometimes the issue isn’t intake or loss; it’s that your gut isn’t absorbing iron properly, regardless of how much you eat.
- Celiac disease damages the part of the small intestine responsible for iron absorption.
- Low stomach acid (from age, certain medications, or acid reflux treatments) makes it harder to break down and absorb iron from food.
- Inflammatory bowel disease (IBD), including Crohn’s and ulcerative colitis, can impair absorption and cause ongoing blood loss.
- H. pylori infection has also been linked to unexplained iron deficiency.
These are worth ruling out with a doctor, especially if your levels stay low despite an iron-rich diet.
Your body might just need more than usual
Certain life stages and activity levels raise your iron requirements well above what a typical diet provides.
- Pregnancy roughly doubles iron needs to support increased blood volume.
- Heavy or endurance exercise increases iron turnover and loss (including through sweat and minor GI bleeding from intense training).
- Growth periods in adolescence increase demand as blood volume expands.
- Heavy periods during life stages such as perimenopause can increase iron loss.

When is it time to get tested?
If you’ve been eating iron-rich foods consistently and your levels are still low, the next step isn’t more meat, it’s time to get your iron levels tested to figure out what’s actually happening in your body. A single iron reading doesn’t tell the whole story:
- Ferritin shows your stored iron — often the first marker to drop before other symptoms appear.
- Hemoglobin reflects how iron is currently being used to carry oxygen.
- Iron saturation (TIBC/transferrin saturation) shows how efficiently your body is using the iron that’s available.
